Can I Get A Real Omelet

What am I going to have for breakfast? I’ll have an omelet. An omelet? The only way I can make an omelet is a scrambled egg omelet-yes it looks like scrambled eggs.

I decided to try to make a folded over omelet looking omelet. As I cooked the beef breakfast sausage, onion, mushrooms and spinach in a non-stick skillet I contemplated the success of this endeavor. I spread the filling evenly in the skillet and poured the eggs over it with great care. The final step was spreading the grated cheese.

I mimicked what I’ve seen done time and again in restaurants and on TV but was afraid to try until now. Carefully moving the cooked egg aside while tilting the pan to cook the remaining egg was a little scary but I got it right.

An experienced cook would flip the omelet in the air to the opposite side but I’m not there yet. I used two spatulas that worked out well. I’m glad it didn’t break apart. The non-stick skillet made each step easy. I successfully slid the omelet onto a plate and it was a beautiful sight to behold. It tasted as good as it looked.

Why do I entertain that little voice whispering in my ear? I don’t know but I’m glad I decided to move forward with making the omelet.

It’s exciting to conquer a fear I’ve had for years. I’m looking forward to my next conquest.

From Dream Home to Cattle Ranch

For a few weeks I have been scouring books from the library for information on building my dream home.

I’ve looked at many house plans but there’s never one that has everything I’m looking for. That means I need to hire an Architect, present her with faucet and ask her to build my house around it. I saw that on a commercial but I believe that is what I need to get my dream home.

I want my dream home to reflect my personality. I’m not sure what that would look like. Building a home from the ground up is a daunting task but how else can I get what I want.

Do I want a one story or two-story, brick or stone. All the information is swirling in my head. It is intimidating because I don’t know anything about the task.

I found myself wanting to own a ranch raising cattle. I know less about having a cattle ranch than building a home. I think I want to build my dream home on enough land to have a ranch not too far from the city.

I will keep searching and do some rough sketching until I have something that an architect can turn into my dream home.

FLASHBACK OF A TRAGIC SITUATION

Monday was the October meeting of Glory Writers. It is a part of the North Texas Christian Writers Group that meets monthly at the Global Spheres Center.

At the meeting a member of the group read the story she wrote about how her life was terrorized for years by a stalker until his death. Her story took us on a journey with her through the twists and turns as God delivered her from his treacherous grip.

Experiencing the journey gave me a flashback when a tragic event almost took my life. The next day I put on paper what happened to me many years ago. Though it was a long time ago it was a hard thing to do. To get the facts on paper I had to step aside from the emotions that were entangled with the facts. I will go back at a later date and let the emotions flow to complete the story. Maybe then I will release the story that may help bring healing to someone going through something similar.

My prayer is they will see how The Lord can bring you out of a death sentence of the enemy with a mighty hand of victory when you think there is no way out.
